The wine cellars, the medieval borough, the store
The Gabiano Castle, located in the Piedmont region, has a history of over 1000 years.
Renovation works are being carried out today on the extension of the wine cellars, built in tuff, on the store and the medieval borough.
The idea behind this project is to implement conservative renovation works only where necessary, in order to preserve the time sedimentation which can still be found in the handiworks.
Thorough studies are carried out in order to identify passive conditioning systems which do not require the aid of technological tools, so to allow the perfect ripening and conservation of the wine, in line with the main research and the tradition of this secular wine producer.
